Waffle Bruschetta with Tomatoes Recipe


Waffle lovers will relish this savory makeover of a breakfast favorite into an appetizer, adding subtle Mediterranean fines herbes, roasted heirloom tomatoes, and Mascarpone to a crispy, golden Kashi® 7 Grain Waffle base.

Fines Herbes Salad

  • 1/4 ounce each fresh chopped parsley, fresh chopped tarragon and fresh chopped chervil
  • 1/4 ounce fresh chives, cut into 1/2-inch pieces
  • Salt and pepper to taste (optional)

Tomato Topping

  • 1 cup organic baby heirloom tomatoes, halved
  • 5 teaspoons extra virgin olive oil
  • Salt and pepper to taste (optional)
  • 3 large organic scallions, chopped
  • 1 organic shallot, minced
  • 2 cloves organic garlic, minced
  • 1/4 ounce slivered fresh basil
  • 4 sprigs fresh thyme
  • 2 Kashi® Waffles, 7 Grain
  • 1/4 cup organic mascarpone cheese, softened


1. For Fines Herbes salad, in small bowl toss together parsley, tarragon, chervil and chives. Season with salt and pepper (if desired).

2. Preheat oven to 350° F. Gently toss tomatoes with olive oil. Season with salt and pepper (if desired). Toss with scallions, shallot, garlic, basil and thyme. Spread in 15- x 10- x 1-inch baking pan lined with parchment paper. Bake, uncovered, for 10 to 12 minutes. Cool to room temperature.

3. Toast Kashi® 7 Grain Waffles according to package directions. Spread mascarpone cheese on warm waffles. Cut each waffle into quarters. Top with roasted tomatoes and Fines Herbes salad. Serve immediately.
