Tuscan White Bean Pilaf

Makes about 15 servings. (⅔ cup serving size)
Ingredients
- 2 packets of Kashi® 7 Whole Grain Pilaf
- ½ cup pine nuts
- 2 teaspoons extra virgin olive oil
- 3 cloves garlic, diced
- 1 large red onion, diced
- 1 teaspoon dried thyme
- 1 teaspoon dried, ground sage
- 3 cups broccoli florets
- 1 pinch salt
- ¼ cup water
- 1 red bell pepper, seeded and diced
- 1 yellow bell pepper, seeded and diced
- 1 15-ounce Cannellini beans
- ½ cup pitted kalamata olives, halved
- ¼ cup sun dried tomatoes
- 2 bunches fresh basil, coarsely chopped
- 6 tablespoons extra virgin olive oil
- 2 tablespoons balsamic vinegar
- ½ teaspoon salt
- Ground black pepper to taste
Directions
- Cook Kashi Pilaf according to directions on the package and set aside.
- Dry toast pine nuts in a small skillet until golden brown and set aside.
- Sauté garlic and onion in first portion of olive oil in a large skillet until limp.
- Add thyme, sage, and stir.
- Add broccoli, salt, water, and stir well.
- Cover with lid, reduce heat to low, simmer for 3 minutes then remove from heat.
- In a large mixing bowl, combine sauté mixture with cooked Kashi Pilaf, bell peppers, beans, olives, sun dried tomatoes, basil, toasted pine nuts and mix well.
- In a small bowl, combine remaining ingredients, whisk together, add to Pilaf mixture, stir well and enjoy.

This recipe looks delicious! I logged on to this site today for the first time and was very impressed by recipes like this one (I love beans!!!), and the rest of the content. I was also very happy to see that you have suggested toppings for your party crackers! Some of my favs, too (artichoke dip, goat cheese, olive tapenade, heaven heaven heaven). I was so excited to see you guys on the shelves of my local Wal-Mart. I live in a pretty rural area and there isn’t much around, so the variety, not to mention quality, of the food here varies; this is not a posh rural area where I can eat locally and feel at ease, unless I’ve grown the food myself. We don’t have co-ops or many edible options. Basically processed food and greasy-spoon restaurants. Other than the fresh fuits and veggies section, I don’t feel that great about the selections of squeeze-cheese and chips available. With Kashi stuff on the shelves, it’s a lot easier to feel good about what I’m putting in my body. Right now I have two Kashi products in my cabinet- I’m rocking the TLC Cherry Dark Chocolate Bars and also the Strawberry Fields cereal, and was so happy to see the crackers as a recent addition to the shelves. You guys make it a lot easier to eat mindfully, and your website kicks, too! Thanks!
