Oatmeal Dark Chocolate Cookie Bread Pudding
Makes 5 servings.
Cooking time: 20 minutes (active), 50 minutes (total)
Ingredients
- 1 package Kashi™ TLC™ Oatmeal Dark Chocolate cookies
- 1 organic egg
- 2 organic egg whites
- 3 cups plain organic soymilk
- ¼ teaspoon cinnamon
- 1 teaspoon pure vanilla extract
- ¼ cup coarsely chopped walnuts
Directions
- Preheat oven to 325°F.
- Crumble cookies into bite-size pieces and add to a small oven-safe baking dish. In a bowl, add egg, egg whites, soy milk, cinnamon and vanilla extract. Whisk together thoroughly. Pour over broken cookies and let soak for 30 minutes.
- Place mixture in oven and bake for 30 minutes, until it is firm but not dry. Top with chopped walnuts and serve.

baked this for almost an hour, and it was still sloshy – dunno what I did wrong, but, I wasn’t a fan…and, i LOVE these cookies

The Kashi cookies seem to have disappeared off the grocery shelves… I can’t find them anywhere any longer!!! But I agree – if you can find them, they are WONDERFUL!!!

I LOVE these cookies. I keep two boxes stocked in my cubboard at all times. Part of my momment of relaxation comes when I eat one of these cookies with a cup of green tea. I would highly advise everyone to try them!!
