Simple Tabbouleh Salad

Makes 8 servings.

Ingredients

  • 1 cup Kashi® Nuggets
  • 1 large Roma tomato
  • ½ red bell pepper
  • ½ cup chopped parsley
  • 2 tablespoons lemon juice
  • 1 tablespoons extra virgin olive oil
  • ½ teaspoon salt or Creole salt seasoning (if more spice is preferred)
  • ½ teaspoon pepper
  • ½ teaspoon garlic powder or chopped garlic
  • ¼ cup water

Directions

  1. Chop tomato and bell pepper into small pieces.
  2. Combine all of the ingredients, except water, and stir.
  3. Refrigerate until mixture is chilled.
  4. About 30 minutes before you are ready to serve, add water and stir. Depending on preferred consistency of salad, you can add more water for smoother texture or less water for crunchier texture.
  5. Suggest serving with toasted pita bread. Enjoy!
