Kashi™ Curry Snack Mix

Makes 5 servings.

Ingredients

  • ½ cup red lentils
  • 1½ cups water
  • 1 teaspoon curry powder
  • ¼ teaspoon garlic powder
  • 1/8 teaspoon cayenne pepper
  • 1/8 teaspoon nutmeg
  • 1/8 teaspoon ground cloves
  • 1/8 teaspoon cinnamon
  • ½ teaspoon black mustard seed
  • 1/8 teaspoon black pepper
  • ¼ teaspoon sea salt
  • 1 tablespoon expeller-pressed canola oil or extra virgin olive oil
  • ½ cup raw cashew pieces
  • ½ cup raw pumpkin seeds
  • 2 cups Kashi® 7 Whole Grain Puffs cereal
  • ½ cup organic golden raisins

Directions

  1. Rinse lentils, place in a medium-sized mixing bowl and add water. Let lentils soak until they are swollen and water is completely absorbed, about 1 hour.
  2. In a small bowl, mix together spices, salt and pepper. Heat oil in a large skillet over medium heat. Add spice mixture to the skillet. Stir constantly until spices are lightly roasted, about 1 minute.
  3. Drain lentils and add to the skillet. Mix well, coating lentils with the spices. Continue cooking 3 minutes, stirring constantly. Add cashews and pumpkin seeds, then cook another 5 minutes. Stir in Kashi® 7 Whole Grain Puffs cereal and cook 2 minutes more.
  4. Spread snack mix on a baking sheet and let cool completely before adding raisins. Store in an airtight container.
  5. Serving Suggestion: The snack mix can also be used instead of croutons on salads.
