Chocolate Peanut Butter GOLEAN® Bar Muffins

Makes 12 muffins.

Ingredients

  • 1 cup unbleached flour
  • 1 cup whole wheat flour
  • 1 cup Kashi® Honey Puffed cereal
  • ½ teaspoon salt
  • 1 tablespoon baking powder
  • ¼ cup raw sugar
  • 1 egg
  • 2 tablespoons canola oil
  • 1 cup fat-free soymilk
  • 1 Kashi® GOLEAN® Peanut Butter & Chocolate bar (cut into small pieces)

Directions

Mix dry ingredients (except the GOLEAN bar) together in a bowl. In another bowl, mix all wet ingredients together. Make a well in the dry ingredients, then pour the wet ingredients into the dry. Mix together just until moistened (do not overmix). Fold in the Kashi GOLEAN bar pieces until covered. Spray muffin cups with nonstick spray. Spoon into cups until ¾ full. Make sure that the bar pieces are covered with batter. Bake at 375°F for 15 minutes or until top is slightly browned.
