GOLEAN® Apple Raisin Squares

Makes 24 squares.

Ingredients

  • 2 cups Kashi® GOLEAN® cereal, finely crushed
  • 1 cup whole wheat flour
  • ½ cup raisins
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • ½ cup applesauce
  • ½ cup evaporated cane juice crystals (or turbinado sugar)
  • ½ cup egg substitute
  • ¼ cup honey
  • ¼ cup canola oil (or oil of choice)
  • 1 teaspoon pure vanilla extract
  • 2 cups apples, finely diced

Directions

Pre-heat oven to 350°F.

In a medium bowl, mix first five ingredients. Mix well, then set aside. In a large bowl, mix together applesauce, cane juice crystals (or sugar), egg substitute, honey, oil, and vanilla. Then add diced apples and mix well. Add dry ingredients to wet and mix well. Spread evenly in oiled and floured 9" x 13" bake pan and bake 40 minutes or until knife comes out clean.

9-16-07 I WOULD LOVE TO TRY THIS RECIPE, HOWEVER THE INSTRUCTION SAY TO MIX IN BROWN SUGAR? THE INGREDIENTS DO NOT LIST BROWN SUGAR. PLEASE HELP :)

turbinado sugar is brown in color. That is the sugar they are referring to.

this was really good..my kids loved it..I did make a couple of changes only because of ingredients i had on hand. I added about 1/3 c of ground flaxseed for texture and nutrition and I replaced the regular applesauce with organic blueberry applesauce and substituted orange flavored craisins for the raisins..i left out the honey and added a little extra applesauce(in all about 1 cup total) so the ingredients were wet enough before baking. They did have a dark color due to the blueberry applesauce, but they are DELICIOUS!
