Red Flower Pilaf Soup

Termed “red flower” for the magenta hue of its Swiss red chard, this chunky, flavorful broth with carrots, cauliflower, and Kashi™ 7 Whole Grain Pilaf is delightfully aromatic.

Makes 8 servings.

Ingredients

  • 1 teaspoon extra virgin olive oil
  • 5 cloves organic garlic, minced
  • 1 organic red onion, diced or sliced
  • 1 head organic cauliflower, broken into large pieces
  • 3 large organic carrots, diced
  • 1 quart water or all-natural vegetable stock
  • 1 bunch fresh organic red Swiss chard, chopped
  • 3 cups Kashi™ 7 Whole Grain Pilaf, cooked
  • Salt and black pepper to taste

Directions

  1. In a medium saucepan, cook olive oil, garlic, onion, cauliflower, and carrots on medium heat until onion is soft, stirring frequently. Add water or vegetable stock and bring to a light boil.
  2. Lower heat and simmer until cauliflower and carrots are tender. Add chopped red Swiss chard, stir in cooked pilaf and cook until chard is tender, but still brightly colored. Add salt and pepper to taste.
