Red Flower Pilaf Soup

Makes 8 servings.
Ingredients
- 1 teaspoon extra virgin olive oil
- 5 cloves garlic, minced
- 1 red onion, diced or sliced
- 1 head cauliflower, broken into large pieces
- 3 large carrots, diced
- 1 quart water or vegetable stock
- 1 bunch fresh red Swiss chard, chopped
- 3 cups Kashi® 7 Whole Grain Pilaf, cooked
- Salt and black pepper to taste
Directions
In a medium saucepan, cook olive oil, garlic, onion, cauliflower, and carrots on medium heat until onion is soft, stirring frequently. Add water or vegetable stock and bring to a light boil. Lower heat and simmer until cauliflower and carrots are tender. Add chopped red Swiss chard, stir in cooked pilaf and cook until chard is tender, but still brightly colored. Add salt and pepper to taste.
