Puffed Pudding

Makes 7 servings.

Ingredients

  • 3 cups Kashi® Puffs
  • 3 cups whole milk
  • 1 cup half and half
  • 1 cup evaporated cane juice
  • 2 eggs
  • 2 teaspoons pure vanilla
  • 3 cinnamon sticks
  • 1 teaspoon cinnamon powder

Directions

  1. In an extra large pot, combine whole milk, half and half, Kashi Puffs, and cinnamon sticks.
  2. Place on very low heat until simmering / light boil. Add vanilla and cinnamon powder.
  3. Boil for 35 minutes.
  4. Stir in evaporated cane juice.
  5. Stir in eggs.
  6. Continue to boil for 10 minutes. Remove cinnamon sticks (if desired).
  7. Pour in bowl and refrigerate. May also be served warm as bread pudding.
