Puffed Pudding
Flexible enough to be served cold or warm as bread pudding, this sweet surprise marries vanilla and cinnamon with Kashi® 7 Whole Grain Puffs cereal.
Makes 7 servings.
Ingredients
- 3 cups Kashi® Puffs
- 3 cups organic whole milk
- 1 cup organic half and half
- 1 cup evaporated cane juice
- 2 organic eggs
- 2 teaspoons pure vanilla extract
- 3 cinnamon sticks
- 1 teaspoon cinnamon powder
Directions
- In an extra large pot, combine whole milk, half and half, Kashi® Puffs, and cinnamon sticks.
- Place on very low heat until simmering / light boil. Add vanilla and cinnamon powder.
- Boil for 35 minutes.
- Stir in evaporated cane juice.
- Stir in eggs.
- Continue to boil for 10 minutes. Remove cinnamon sticks (if desired).
- Pour in bowl and refrigerate. May also be served warm as bread pudding.

I would really like to see the sodium content included in the nutrition information. my husband is on a restricted-sodium diet. And it won’t hurt me any to reduce my sodium intake either.
