Chocolate Haystack Cookies

Makes 24 servings.

Ingredients

  • 4 cups Kashi® Honey Puffed cereal
  • 1 cup shredded unsweetened coconut
  • 12 ounces semi-sweet chocolate chips
  • ½ cup all-natural peanut butter

Directions

Combine Kashi Honey Puffed cereal and coconut in a large bowl.

Place chocolate chips in a small, microwave-safe bowl and microwave until melted, stirring every 30 seconds. Add peanut butter for final 20 seconds and stir until smooth.

Pour melted mixture over cereal and stir until well coated. Drop single tablespoon-sized dollops onto waxed paper, cool until firm and serve.

I used half regular puffs and half honey puff to save a couple calories. However – too much busy work to make haystacks. Instead lightly spray a 9×13 pan with Pam and press in and chill. Then use a sharp knife to cut into squares. Better portion control this way and a lot quicker. These make a very tasty non-guilty treat!
