Natural Ranch TLC™ & Romano Crusted Salmon

Makes 4 servings.

Ingredients

  • ½ cup Kashi® TLC™ Natural Ranch Crackers, crushed into a fine meal (about 20 crackers)
  • ¼ cup Romano cheese, grated
  • 1 tablespoon garlic powder
  • 1 teaspoon dried oregano
  • ½ teaspoon dried basil
  • ½ teaspoon black pepper
  • 1 teaspoon olive oil
  • 1 pound salmon filets, cut into 4 square size pieces (or substitute 4 medium boneless, skinless chicken breasts)
  • 1 cup buttermilk or plain yogurt

Directions

Preheat to 375°F.

Combine first six ingredients in a shallow bowl. Place parchment paper onto cookie sheet and drizzle olive oil onto the parchment paper. Dip salmon filets in buttermilk, roll in cracker crumb herb mixture and place breaded filets onto the parchment paper.

Bake for about 20 to 25 minutes until crispy and cooked throughout (amount of time will vary depending on thickness of salmon filets).

I made this for my husband and I and we thoug it was very good. I think I would use real garlic instead of garlic powder next time. We had leftovers and I used it to make a spinach salad topped with the salmon. THAT was amazing!

Yummy! This is an alternative to the way I have been baking my salmon filets that will move to the front of my favorites list. I also tried it with filet of flounder. The protein for 3.5 oz portions before adding the coating is 19g. of protein & 90 calories/15 cal. from fat. I reduced the baking time because the flounder is thinner, topped each portion with a sprig of fresh Rosemary & a thin slice of lemon. Don’t worry about the leftovers, there probably won’t be any!!

I am going to try this ASAP! My husband and I love Salmon and new receipe idea’s. Will get back on the tast. I am going to add some Ole Bay Seasoning to the recipe. Seafood just aint seafood without Ole Bay seasoning.
