Pineapple Cream Cheese Muffins
Makes 12 servings.
Ingredients
Dry Ingredients- 2 scoops Kashi® GOLEAN® Vanilla Powdered Shake Mix
- ⅓ cup turbinado sugar
- l cup whole wheat flour
- l tablespoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ teaspoon cinnamon
Wet Ingredients
- ½ cup unsweetened applesauce
- 4 large eggs
- 8 ounces low-fat cream cheese
- l cup crushed pineapple with juice
- l teaspoon vanilla extract
Directions
Preheat to 400°F.
In a medium size bowl combine dry ingredients and mix well. In a separate large bowl combine wet ingredients and mix well. Add the dry ingredients to the wet ingredients and fold together gently until just mixed. Do not over mix. Fill nonstick muffin tins with muffin batter and bake for 20 minutes.
