Kashi® TLC® Toasted Asiago Cracker Crusted Chicken Breast
In less than an hour, you can enjoy a Greek-influenced chicken dinner with cinnamon-ricotta-spinach stuffing and TLC® Toasted Asiago Cracker crust.

Ingredients
- 1 pound free-range organic chicken breast halves (about 4), boneless and skinless
- 2 cups fresh organic spinach, steamed
- 1 pinch cinnamon
- 1/3 cup organic part skim ricotta cheese
- salt and pepper -- to taste
- 2 free-range egg whites
- ½ cup Kashi® TLC® Toasted Asiago snack crackers, ground
- 1 tablespoon extra virgin olive oil
- 1 cup low-sodium organic tomato juice
- 3 sprigs fresh thyme leaves
- 1 allspice berry
- 1 clove
Directions
- Pound the chicken flat (you can also have a butcher do this for you).
- Preheat the oven to 350 degrees.
- In a bowl, mix the spinach, cinnamon and ricotta cheese together. Divide the spinach mixture between the chicken breasts, by placing a mound directly in the center of the chicken. Season them with salt and pepper.
- With the chicken on a flat work surface in front of you, fold the left side ¾ quarter of an inch to the right overlapping with the cheese mixture. Duplicate this on the right side and then fold one of the sides not yet folded, over the cheese mixture. Thus enclosing the cheese with-in the chicken.
- Beat the egg whites until frothy. Dip the chicken into the egg white and then into the Kashi® TLC® Toasted Asiago cracker meal.
- In a non-stick, oven-proof pan, heat the oil over medium heat. Sear the chicken on all sides, starting with the seam edge, about 3-4 minutes per side.
- Place the chicken in the oven for about 20 minutes. Remove the chicken from the pan, remove the toothpick and let it rest covered for about 5 minutes.
- In the same pan, pour the tomato juice, thyme, allspice and clove and cook for two minutes over medium heat.
- Pour the sauce over the chicken and enjoy!
