Easy-Peasy Kashi™ Cookies

Fresh-baked cinnamon-vanilla-cranberry goodness in a cookie! Hearty Kashi® 7 Whole Grain Flakes add texture and fiber to these tasty treats.

Makes about 36 cookies.

Ingredients

  • ½ cup margarine
  • ¾ cup evaporated cane juice
  • ¾ teaspoon cinnamon
  • ½ teaspoon baking powder (aluminum free)
  • 1 organic egg
  • 2 tablespoon organic nonfat milk or soy milk
  • 1 teaspoon pure vanilla extract
  • ¾ cup whole wheat flour
  • ¾ cup Kashi® Flakes cereal, crushed
  • ½ cup organic raisins
  • ½ cup dried organic cranberries

Directions

  1. Preheat oven to 375°F.
  2. Beat margarine for 30 seconds on high. Add evaporated cane juice, cinnamon, and baking powder; beat until combined.
  3. Blend in egg, milk and vanilla.
  4. Blend in flour and Kashi® Flakes until no more can be added; combine the rest by hand.
  5. Stir in dried fruit.
  6. Drop by rounded teaspoon on to lightly greased cookie sheet.
  7. Bake for 8 to 10 minutes, or until edges are golden brown.

    I don’t have any stores near me that sell evaporated cane juice is there something I can substitute such as Agave Nectar?

    I made these cookies over the weekend (minus the raisins) and everyone who tried them loved them! They are yummy! I made two batches and I recommend refriderating the dough for a few hours first before baking. The first batch went flat on the cookie sheet. The second batch (refriderated dough) held up their shape a lot better.

    I am trying to help my grandchildren learn to live healthy and introduced them to Kashi cookies. They love the taste and now prefer them to regular cookies. I noticed when they gave a cookie to a friend, the friend at first didn’t know what to think since Kashi is different in texture and taste. However, the friend asked for more and asked his mom to buy these funny cookies.
