Kashi™ Summer Vegetable Pilaf

Take advantage of plentiful summer veggies like zucchini, broccoli, peas, and onions, dressed up with saffron, thyme, basil, and a sprinkling of feta cheese in a base of Kashi™ 7 Whole Grain Pilaf.

Ingredients

  • ½ cup organic zucchini, sliced ¼" thick
  • ½ cup organic summer squash, sliced ¼" thick
  • 1 cup organic broccoli florets
  • ¼ cup fresh organic peas
  • ½ cup organic red onion
  • ½ cup organic red and green bell pepper, thinly sliced
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon chopped organic garlic
  • 1 teaspoon saffron
  • 1 tablespoon fresh thyme leaves
  • 3 cups all natural vegetable broth
  • 2 cups Kashi™ 7 Whole Grain Pilaf (prepared per package directions)
  • 1/3 cup fresh basil leaves
  • 1/3 cup organic feta cheese

Directions

  1. In a stovetop steamer, steam the zucchini, squash, broccoli, peas, onion, and peppers for about 7 minutes or until just tender. This will release any bitter juices in the veggies.
  2. In a large sauté pan, over medium heat, cook the garlic and saffron in the olive oil, for about five minutes, do not let it turn colors.
  3. Add the thyme and veggie broth and simmer for 5 minutes.
  4. Now put all the veggies in the broth along with the pre-cooked Kashi™ 7 Whole Grain Pilaf and the fresh basil. Heat through, about 7 minutes.
  5. Plate the veggie pilaf and top with some crumbled feta and enjoy!
