Olive Oil Roasted Heirloom Tomatoes, Fines Herbes Salad on Top of Toasted Kashi® Heart to Heart® Honey Oat Waffles
Makes 4 servings.
Ingredients
- Fines Herbes Salad
- ¼ oz. each: fresh parsley, chives, tarragon, chervil, and basil
- Tomatoes
- 1½ oz. extra virgin olive oil
- 3 large organic scallions
- 1 organic shallot, minced
- 2 cloves organic garlic, minced
- 4 sprigs of thyme
- ¼ oz. basil chiffonade (from Fines Herbes preparation)
- ½ pint organic baby heirloom tomatoes, rinsed and halved
- 2 Kashi® Heart to Heart® Honey Oat Waffles
- 4 Tablespoons organic Mascarpone cheese
- Optional to taste: salt and ground pepper, zest of 1 organic lemon

To prepare the Fines Herbes salad:
- Parsley, rough chop
- Chives, half-inch pieces
- Tarragon, rough medium fine chop
- Chervil, leaves picked
- Basil, chiffonade
- Set aside the basil for the tomatoes
- Season the four Fines Herbes lightly with salt and ground pepper.
- Prepare the Fines Herbes salad and set aside.
- Preheat the oven to 350°degrees. Gently toss the tomatoes in olive oil. Season with salt and pepper. Sprinkle with scallions, shallots, garlic, basil and thyme. Layout onto a parchment lined sheet pan and roast for about 10-12 minutes. Allow to cool to room temperature.
- In a 425°F oven, toast Kashi® Heart to Heart ®Honey Oat Waffles to a crisp outside, but still tender inside (short time, hot oven). Spread 2 Tablespoons of Mascarpone onto each waffle (like butter). Cut each waffle into 4 pieces (so there are 8 pieces total).
- Top each waffle triangle with roasted tomato and a pinch of Fines Herbes salad.
