Kashi™ Friendly Fiber Muffins

Get some fiber in a fun way with these tasty Kashi® Good Friends® cereal treats touched by honey, applesauce, banana, and cinnamon.

Makes 12 muffins.

Ingredients

  • 1 cup whole wheat flour
  • 2 tsp. baking powder (aluminum free)
  • 1 tsp. cinnamon
  • ½ tsp. salt
  • 1¾ cups Kashi® Good Friends® Original cereal
  • 1 cup organic skim milk, rice or soy milk
  • 2 free-range egg whites
  • ¼ cup honey
  • ½ cup organic unsweetened applesauce
  • 1 medium organic ripe banana, mashed
  • Nonstick cooking spray
  • Directions

    1. Preheat oven to 400° degrees.
    2. In a small bowl, stir together flour, baking powder cinnamon, and salt. Set aside.
    3. In a large mixing bowl, combine Kashi® Good Friends® Original cereal and milk and let stand for 2-3 minutes. Add the egg whites and beat well. Stir in honey, applesauce and banana. Add flour mixture and mix only until dry ingredients are moistened (over-mixing will produce rubbery muffins).
    4. Fill sprayed muffin tins. Bake for 20-25 minutes, or until lightly browned.

    Kewlpenguin you could always try puréed pumpkin and add some pumpkin pie spice. I think pumpkin is lower in calories as well.

    I’m gonna eliminate the salt and use less applesauce, try the pumpkin and spices, maybe add some milled flax seed or some grape seed oil.

    I thought these were awful – a little bit of fat wouldn’t have hurt terribly, and probably would have helped immensely. Won’t make these again – I threw them all out. What a waste!

    This recipe sounds great but I’m allergic to bananas :( Any suggestions for a substitute?

    A muffin with no sat fat, relatively low carbs and low sugar??? I am definitely going to try this. Probably will eliminate salt as well, based on comments. Thank you!

    For a great taste use flavored honey or you can use Sugar Free

    Praise God I had this recipe from a Weight Watchers meeting and can not find it now I have it again THANK YOU these are yummy!!!!!!!!!!!!

    My preschool daughters and entire family love these muffins. The recipe is easy, even kids can help making these yummy muffins! Great any time of the day.

    Good Recipe! But it tastes so much better with less salt. I love these Muffins! do you have anymore recipes on muffins or pancakes?
