Kashi™ Crazy for Raisins Oatmeal Spice Cookies

Rolled oats and Good Friends® Cinna-Raisin Crunch® cereal buddy up to nutmeg and vanilla for a moist-crisp sweet treat.

Makes 24 cookies.

Ingredients

  • 6 Tablespoons (3 oz.) organic light cream cheese, cut in small pieces
  • 6 Tablespoons (3 oz.) unsalted organic butter, softened & cut in small pieces
  • 3 free-range egg whites
  • ¾ Tablespoon pure vanilla extract
  • ¼ teaspoon ground nutmeg
  • 1¾ cups Good Friends® Cinna-Raisin Crunch® cereal
  • 1⅛ cups evaporated cane juice crystals
  • ¾ cup organic rolled oats (not instant)
  • ¾ cup whole wheat flour
  • ¾ teaspoon baking soda
  • Non-stick cooking spray
  • Directions

    1. Preheat oven to 350° degrees.
    2. In a large bowl, mix the cream cheese, butter, egg whites, vanilla and nutmeg until creamy.
    3. In another bowl, lightly crush ¾ cup of Good Friends® Cinna-Raisin Crunch® cereal, then mix in evaporated cane juice crystals, oats, flour and baking soda. Combine the contents of both bowls until blended. Fold in the remaining 1 cup of uncrushed Good Friends® Cinna-Raisin Crunch® cereal and mix until well blended.
    4. Lightly spray cookie sheet with non-stick spray and evenly place tablespoons of dough onto pan. Lightly press down on cookies until ½ inch in height. Bake at 350° degrees for 15-17 minutes, or until lightly browned.

    I don’t eat dairy nor have I ever liked it.

    I don’t like cream cheese at all – is there a substitute I can use? I don’t usually eat/use dairy in cooking if I can help it. Does anyone think a soy version would change the flavor too much?

      I don’t use dairy in baking either it doesn’t seem right to me. Sometimes in other recipes I just don’t use the cream cheese or sour cream, ect. I don’t know if this actually helps answer your but if you decide not to use the cream cheese I hope it works out for you. Good Luck!!

    I made these cookies 15 minutes ago with my kids, and they are out of this world. Shhh! Don’t tell them they’re healthy! :)
