Kashi™ Crazy for Raisins Oatmeal Spice Cookies
Makes 24 cookies.
Ingredients
- 6 Tablespoons (3 oz.) organic light cream cheese, cut in small pieces
- 6 Tablespoons (3 oz.) unsalted organic butter, softened & cut in small pieces
- 3 free-range egg whites
- ¾ Tablespoon pure vanilla extract
- ¼ teaspoon ground nutmeg
- 1¾ cups Good Friends® Cinna-Raisin Crunch® cereal
- 1⅛ cups evaporated cane juice crystals
- ¾ cup organic rolled oats (not instant)
- ¾ cup whole wheat flour
- ¾ teaspoon baking soda
- Non-stick cooking spray
- Preheat oven to 350° degrees.
- In a large bowl, mix the cream cheese, butter, egg whites, vanilla and nutmeg until creamy.
- In another bowl, lightly crush ¾ cup of Good Friends® Cinna-Raisin Crunch® cereal, then mix in evaporated cane juice crystals, oats, flour and baking soda. Combine the contents of both bowls until blended. Fold in the remaining 1 cup of uncrushed Good Friends® Cinna-Raisin Crunch® cereal and mix until well blended.
- Lightly spray cookie sheet with non-stick spray and evenly place tablespoons of dough onto pan. Lightly press down on cookies until ½ inch in height. Bake at 350° degrees for 15-17 minutes, or until lightly browned.

I don’t like cream cheese at all – is there a substitute I can use? I don’t usually eat/use dairy in cooking if I can help it. Does anyone think a soy version would change the flavor too much?
I made these cookies 15 minutes ago with my kids, and they are out of this world. Shhh! Don’t tell them they’re healthy! :)
