Kashi™ Apple Crunch
Makes 8 servings.
Ingredients
- 5 organic green apples, cored and cut into ½ inch pieces
- 2 tablespoons organic apple juice concentrate, unsweetened
- 2 tablespoons evaporated cane juice crystals
- 2 teaspoons fresh organic lemon juice
- ½ teaspoon cinnamon
- ¼ teaspoon ground cloves
- ⅛ teaspoon nutmeg
- 1 ½ cups organic apple juice, unsweetened
- 1 tablespoons arrowroot powder (or substitute cornstarch)
Topping
- ⅓ cup rolled oats
- ⅔ cup Kashi® GOLEAN Crunch!™ cereal
- 1 tablespoon honey
- 1 tablespoon organic apple juice concentrate, unsweetened
Directions
- Combine apples, apple juice concentrate, evaporated cane juice crystals, lemon juice, spices and apple juice in a large saucepan. Bring to boil, then reduce heat and simmer for about 15 minutes.
- Remove about ¼ cup of apple juice from mixture and whisk in the arrowroot. Add arrowroot mixture back to hot mixture and stir until well combined. Remove from heat.
- Place topping ingredients in a food processor or blender and blend until mixture is the consistency of streusel.
- Pour the hot apple mixture into a 9-inch pie pan and smooth out evenly. Evenly disperse the topping over the apples. Lightly press the topping into place (if needed). Bake at 375°F for 10 minutes, or until mixture is bubbly and the topping is browned.

My friend shared this with me and it’s so delicious; hard to eat a portion but better a portion than nothing. Sweet and healthy treats like these make losing weight less painful. I can’t wait to make it. P.S. The Kashi Good Friends muffins are fantastic!!!!
