Kashi™ Spicy Honey Almond Snack Mix

The pleasure of this homemade, toasty snack is heightened by its tantalizing balance of sweet and spicy: Crunchy clusters meet tender coconut, honey, and curry — yum.

Makes 8 servings
Preparation time: 25 minutes

Ingredients

  • ¼ cup organic coconut flakes
  • 4 cups Kashi® GOLEAN Crunch!® Honey Almond Flax cereal
  • 2 tablespoons organic golden flax seeds
  • 3 tablespoons expeller-pressed safflower oil
  • 1 teaspoon low-sodium soy sauce
  • ¼ cup almonds, sliced and toasted
  • 1 tablespoon curry powder
  • 2 tablespoons white sesame seeds
  • ¼ teaspoon cayenne pepper
  • ¼ teaspoon ground cumin
  • ¼ teaspoon kosher salt
  • 1 tablespoon local honey

Directions

  1. Preheat oven to 300°F. Begin by toasting coconut flakes. Spread coconut on a cookie sheet, place in oven for 2-3 minutes or until flakes begin to brown slightly. In a large bowl, combine all ingredients. Toss well to thoroughly coat and mix. Spread mixture evenly on a baking sheet in a ½-inch thick layer. Put into oven and bake for 3-5 minutes or until lightly browned. Let cool to room temp and enjoy.
  2. TIP: The snack mix can be kept in airtight container for a several weeks or made in advance for parties.

    At 9.02g net carbs per serving this is my kind of recipe due to being diabetic. Will definitely have to try this one. But, I don’t know where I’ll find flax seeds, and expeller-pressed safflower oil. The town I live in only has a Super Wal-Mart, and Kroger, however, we do have one health food store, but they will probably have to order it.

    This was a tasty snack but because it didn’t cluster up it was a little difficult to eat.

      Mine didn’t cluster either but if you’re going to make it again I recomend using a spoon or spork.
