Roasted Apple Butter

When making your own caramelized apple butter is this easy — and the results so delicious — there’s no reason to settle for commercial varieties, which usually contain added sugars.

Makes 2 cups

Ingredients

  • 8 medium organic McIntosh apples (2¾ pounds), peeled, cored, and quartered
  • 2 cups unsweetened organic apple juice

Directions

  1. Preheat oven to 450°F. Arrange apples in a large roasting pan. Pour apple juice over apples. Bake until tender and lightly browned, about 30 minutes. Using a fork or potato masher, thoroughly mash apples in roasting pan
  2. Reduce oven to 350°. Bake apple puree, stirring occasionally, until very thick and deeply browned, 1 1/2 to 1 3/4 hours. Scrape into a bowl and let cool.
  3. MAKE AHEAD TIP: Store in an airtight container in the refrigerator for up to 2 weeks or freeze for up to 6 months.

    I love the 0 g fat. I wish I could adjust all of my recipes accordingly; however, it’s a family thing that they all want to be around when cooking (if not participating). It’s very hard to break old habits about making it where fat is always factored in. Kashi & now Eating.Well.com is slowly bringing about that change.
