Cool Fresh Corn Relish

Fresh corn lends its own natural sweetness to this healthy and refreshing summertime treat — a welcome alternative to creamy coleslaw. Serve it as a light vegetable side dish.

Makes 12 servings, about 1/3 cup each.

Ingredients

  • 5 large ears organic corn (about 3 cups kernels)
  • 1½ cups finely diced organic sweet onion
  • ¾ cup finely chopped flat-leaf parsley (1 to 2 bunches)
  • 3 Tbsps organic lime juice
  • 2 Tbsps expeller-pressed extra-virgin olive oil
  • ¼ teaspoon salt

Directions

  1. Microwave corn, in the husks, on high until steaming and just tender, 7 to 9 minutes. When cool enough to handle, remove the husks and silk. (Alternatively, bring a large pot of water to a boil. Remove husks and silk from the corn and boil until just tender, about 5 minutes.) Slice the kernels from the corn using a sharp knife.
  2. Combine the corn kernels, onion, parsley, lime juice, oil and salt in a medium bowl. Serve at room temperature or cold.

MAKE AHEAD TIP: Cover and refrigerate for up to 3 days.

    Substitute Cilantro for the parsley and add the black beans and jalapeno! Fabulous!

    Try NOT cooking the corn, use it raw and enjoy an even more healthy version (and yummy, very sweet). Grow your own black beans!

    Add some red Pepper to the black beans and it will be even better! Throw in some cheese and yummier yet.

    add some black beans for additional fiber; yummy!
