Kashi® GOLEAN Crunch!® Pineapple Upside-Down Pancakes
Buttermilk lends just the right tenderness to the batter for these hearty pancakes with fiber and protein, made from one of our favorite Kashi cereals, GOLEAN Crunch!®.
Makes 24 pancakes.
Ingredients
- 2 cups Kashi® GOLEAN Crunch!® cereal, crushed slightly
- 1 cup whole wheat flour
- ½ cup quick-cooking oats
- 1 teaspoon baking soda
- ½ teaspoon nutmeg (optional)
- 1½ cups low fat organic buttermilk
- 2 Tablespoons pure maple syrup
- 2 Tablespoons expeller-pressed canola oil
- ¼ cup organic pineapple juice (use juice saved from crushed pineapple below)
- 2 large free-range eggs (or egg substitute)
- 1 – 8 oz. can crushed organic pineapple (no sugar added), drained (save juice for above)
- Optional Toppings
- Sliced organic bananas, organic nonfat vanilla yogurt, pure maple syrup
Directions
- In a large mixing bowl, add the first 5, dry ingredients together. In a separate mixing bowl, whisk together the next 5 ingredients. Set crushed pineapple aside.
- Fold the wet mixture into the dry mixture until combined. Refrigerate batter for at least one hour so the ingredients combine completely and batter thickens (you can also refrigerate the batter overnight).
- Coat griddle or large skillet with non-stick spray and heat pan over medium heat.
- Scoop about ¼ cup of pancake batter onto heated pan, leaving enough room between pancakes to allow them to spread. Drop a heaping tablespoon of crushed pineapple in the middle of each pancake and cook for about 45 seconds, or until tops of pancakes bubble and edges begin to firm up.
- Carefully turn the pancakes over and continue to cook for an additional minute or until golden brown.
- Serve with pineapple side up, topping each pancake with a dollop of yogurt, fruit slices and a drizzle of maple syrup.

I made a vegan version this morning, using plain warm soymilk plus 1-1/2 Tbsp lemon juice in place of the buttermilk, and 1 Tbsp. Ener-g egg replacer + 3 Tbsp. water in place of the eggs. I needed 16 oz. of pineapple. Pancakes were yummy, and I’ll make them again, but with less nutmeg next time. They were plenty sweet as-is, without any additional toppings. Also pancakes stuck to the griddle a bit and were fairly delicate, so they were tricky to flip. (Lowering the griddle temperature to about 340 seemed to help.)

They do freeze well. I usually defrost in microwave and reheat in frying pan.

bogden about 3 years agoA vegan substitute for buttermilk is to just add two tablespoons of lemon juice or vinegar to one cup of soy or almond milk etc. Let it stand for about ten minutes so it thickens. If you use vinegar use white because cider vinegar will change the flavor too much. You can also use tofu but I haven’t tried that – use silken tofu with some water and the vinegar/lemon juice.

I can’t eat flour so I’d just add more oatmeal until I got the consistency I wanted. I also dip my pancakes in unsweetened applesauce….tastes better and is much healthier than syrup!

I love the Kashi Go Lean Crunch cereal, so the idea of using it to make the pancake batter sounds really good. I gave away some of my Kashi cereal coupons and used the rest myself. Looks like I’ll have to buy more cereal (even without using coupons) so I can make pancakes.
