Barley
Barley is a venerable grain that boasts both flavor and nutrition. It has a robust, nutty flavor and maintains its chewy texture well after cooking. Barley contains a special type of soluble fiber called beta glucan which has been studied for its effect on cholesterol and blood sugar. Barley adds a nutty goodness and heartiness to foods like pilaf, cookies, and cereals, and we use several varieties of barley in our foods.

Rye
This close relative of wheat probably made the leap from wild seed-bearing grass to cultivated cereal grain by accident, but has proven itself worthy by thriving even in the toughest conditions. Because rye’s germ and bran are harder to separate from the hull than those of other grains, rye flour generally retains its nutrients. Plus, rye contributes fiber, which promotes satiety, so it’s good for weight management.

Hard Red Wheat
When it comes to whole grains, wheat is Kashi’s king—it’s used more than any other grain in Kashi® foods. Wheats are essentially grasses whose seeds, or wheat berries, are used for food. Hard red wheats contain protein, vital nutrients, fiber, and have excellent milling and baking qualities.

Triticale
Typically referred to as a hybrid cross, triticale shares some qualities with its parents, wheat and rye, as well as offering gifts all its own— namely impressive protein content for a grain, the same amount of the essential amino acid lysine as wheat and a long shelf life. All in all, it’s a great co-star in mixed grain blends.

Brown Rice
Rice is the key food source for more than 3 billion people – half the world’s population! Rice that retains its bran and germ layers, or “brown” rice, contains easily digestible protein, a small amount of fat, and vitamins and minerals. Most importantly, rice protein contributes some of the essential amino acids for the human body.

Oats
Oats are relatively new among grain crops; their cultivation goes back only several thousand years. Oats contain soluble fiber and can help reduce the risk of heart disease through the effect on LDL ("bad") cholesterol, and may help lower blood pressure. Oats have a hearty texture and nutty flavor many people love.

Buckwheat

Our barley hails from such barley-growing hubs as Utah, Idaho, North Dakota, South Dakota, and Saskatchewan, Canada. In some of our foods, we use a variety called hulless waxy barley, sourced from growers in Montana.

Our 2,500-acre farm is located on the tableland in Western Nebraska. Marcy and I have been in business as organic growers since 1985. My grandfather arrived here in 1920 as part of the great wheat ranches of the 1920s. After the hard lessons of the 1930s identified a need to diversify, we now raise organic peas, millet, flax, and amaranth to complement our beautiful waves of wheat. We started with 1,400 acres of family farm and expanded with our reputation to the 2,500 we farm and care for today.
