Perfect pasta salads

Summer parties often mean rich, mayonnaise-y pasta salads. If you want the flavor without all the fat, take heart: You can update your pasta salad to take advantage of the spring harvest and fresh herbs! Today, challenge yourself to make the following changes:

• Increase parsley or basil from a pinch to a healthy handful.

• Replace white-flour pasta with whole-grain.

• Integrate nutritious veggies like broccoli, cherry tomatoes, radicchio and arugula.

• Switch out creamy dressing for vinaigrette, and add a dash of flax seed oil.

    I have done all these things but never tried the flax seed oil. Is it bad to use a reduced fat creamy dressing?

    My daughter and I like to sprinkle wheat germ on cottage cheese and salads. It can also be used as toppings on casseroles as well.

    I have done all of these things (except the flax seed oil) in the last year and love what it has done for my menus. Now I will add the flax seed oil.

    the extra parsley was a great addition and went well with the fresh cherry tomatoes and vinaigrette!
