Pure chocolate pleasure

Summer’s berry bounty make’s it a great time to master the art of melting chocolate. As a dessert or fresh fruit topping, pure chocolate can’t be beat. Today, challenge yourself to learn how to make melted chocolate. Here are the basics:

• Using a serrated knife, chop a chocolate bar into cubes. (Avoid using a food processor, as this disturbs the chocolate’s fat distribution and hinders melting.)

• Place chunks in a heat-proof glass bowl.

• Set bowl over a pot with one inch of simmering water in it.

• Stir; remove when there are still a few tiny chunks (remaining heat will melt the rest without burning).

• Dip a fresh strawberry and enjoy!

    Worked on this one since last Christmas when I bought regular chocolate and white chocolate and melted it for pretzels for Christmas gifts. Everyone was surprised and loved them.

    Delicious treats like these are exactly why everyone needs to own a double boiler or a fondue pot. Beware that certain really high cocoa content chocolates melt differently! Adding a little cream can help (or soy creamer, or mix chocolate types…)
