    I have accepted the vegetarian diet for 3 weeks now and I love it! Does anyone have any good simple dinner meals ideas?

    My lunch is always a salad with various beans added to it. We have salad every night also at dinner. My son loves spinach, he will grab the bag and go watch his afternoon cartoons. We have no junk or soda in our house. That is a special reward when out.

    The only meat I eat is from the Kashi frozen entres. I am starting to eat tofu with meals as a substitue. I’m glad I did gave tofu a try and I love it, and I want more tofu recipes!
