Freeze please
Most of us don’t immediately think “freezer” when we call to mind natural foods. But frozen foods are a fact of life that’s here to stay, and they can be a busy person’s best friend at weekday dinnertimes without compromising quality. Today, challenge yourself to use your freezer well to actually extend your natural eating habits. Some quick, healthful meal-starters that start in the freezer:
• Frozen chicken breasts (defrost in the microwave or in the refrigerator).
• Sausage or meatless sausage substitutes.
• Organic and/or whole grain pasta stuffed with vegetables or cheese.
• Frozen veggies of all types (so quick to defrost!).
• Whole-grain bread, pita, flatbread, or rolls.
• Quick-cook whole-grain rice packs and other grains.

We bought a chest freezer last year and I love it. It saves me time, money, and helps us eat healthier. I can cook up a big pot of dried beans on the weekend and freeze them in meal sized containers. I can do the same with brown rice. It’s great to make healthy, whole-grain meals when I have time, then thaw and cook when it’s time for dinner! Frozen veggies are a staple- especially in the winter when little is in season.
