Who doesn’t love a heaping helping of mac ‘n cheese on a cold winter’s day? Okay, there may be a few naysayers, but for the rest of us, mac ‘n cheese qualifies as a mouthwatering splurge. But can it be a regular comfort food? Yes—with a few changes. Today, challenge yourself to cook up a healthier, leaner form of the original, with the following changes:

• Use only whole-grain macaroni or other pasta.

• In the sauce, replace some dairy (milk, cheese, cream) with cornstarch to thicken.

• Rely mostly or fully on low-fat cheese instead of full-fat varieties.

• Add flavor to sauce with chicken broth and garlic.

    I made Mac N Cheese the other night using Fiber Enriched Noodles (my fiance refuses to eat whole grain), 1/2 c 2% cheddar and 1/2 c 2% mozzarella cheese. It is just as tasty as store bought Mac N Cheese or restaurant style. :)

    I always use whole grain pasta also. Used low fat ,low sodium swiss cheese. Yeah ,only 30 grms. sodium per ounce!

    Lots of rain here and mac and cheese sounds like a great lunch. We’ve been forgoing it because we’re trying to be more “heart healthy”. But, today I’ll try making it a little differently, as suggested.
