Parents around the country lament picky kids’ unwillingness to eat their veggies. You can help prevent nutritional deficits by sneaking in a little green stuff in creative ways. Today, challenge yourself to try some of the following tips:

• Freeze pureed kale into ice cube trays. Use the squares in smoothies and pasta sauce.

• Grate zucchini and incorporate it into fritters, muffins, and breads.

• Sprinkle minced kale or other dark leafy greens over pizza, pasta, and quesadillas, or into burritos and burgers.

    Sautéed kale with olive oil and garlic to go with dinner tonight. It was a great way to get some leafy greens.

    I have to say that I was (and kind of still am) the kid that didn’t like lots of vegetables. My father didn’t like them either, so I was never really offered or forced to eat too many. But I forced myself to eat broccoli and now really like it. Maybe I can move on to spinach now.

    I’m the only one in the house that likes squash – other than pumpkin. I defrosted the last of my in-law’s home grown summer squash and made bread with it. A winner with everyone in the family!

    I have started keeping a bag of fresh spinach and challenging myself to come up with clever ways to use it, before it goes bad. Tonight, I am going to try it with hummus and home made whole wheat tortilla chips.

    When breading fish or chicken I like to run broccoli through the food processor to make it a similar consistency to the bread crumbs. the kids never know they’re eating their vegetables. – add broccoli to the bread crumbs or coat fish/chicken in broccoli then in breading and cook.

    My daughter is 6 mo. and too young to really care i just try to make sure she eats a large variety of veggies young and stick with it. Now getting her father to do the same is a different story. He is the one i need to work on!

    I got my son to eat broccoli by telling him they were little trees. I don’t know why that worked but it did. Now onto peas and carrots..

      WOW, that worked for me too when i was a kid, my dad told me i was a giant and broccoli were trees. Figuring out mayo could be a little bit of snow was my thing. Hehehe! Way to go! :D (if it makes you feel hopeful, i love peas and carrots too).

    I disagee with this challange, I have two children at home, it teaches awful eating habits. What you want to do is broden their horizens. I don’t have a problem sneaking in some “helpers” every now and then, but deception does not good parenting make.

    I like many veggies as it is, and I find it shocking (and sad) that many kids around my age (17) absolutely hate vegetables and NEVER eat them! I always have 1/2 serving-1 serving at lunch and dinner…I love carrots, lettuc (yum salad), fresh spinach, broccoli, bell peppers, cauliflowers and onions!

    I love this challenge. For my kids, I puree vegees in advance, freeze them, then defrost + slip them into various dishes or pasta sauces to make sure they get some secret nutrition.
