When it comes to the traditional center of so many winter holiday tables, all birds are not equal. From free-range and organic varieties to pre-cooked and pre-stuffed types, options abound. Today, challenge yourself to choose a bird that fits in with your everyday food values. Some choices to consider:

• Uncooked turkeys come in conventional, free-range, Kosher, and organic varieties. Ask your butcher how and where your turkey was raised and butchered.

• Some outlets let you order online or by phone is advance. Call early for the biggest range of sizes and accompaniments.

    I bought our Free-Range Naturally/Organic fed Turkey this year from a local health food store that gets them from a local farm.

    We get free ranged turkeys from the Amish not far from our home.

    My family just moved and since I didn’t know any nice places to shop went up to L.A. and used a Kosher butcher my mom uses.

    I ordered both of our holiday turkeys this year directly from a certified organic farm. Our Thanksgiving turkey was the best I’ve ever eaten, and it has been so hard not to pull the Chirstmas one out of the freezer and cook it early!
