Eat the rainbow
The colors of foods found on your plate may have an effect on your health. I have no trouble eating fruit every day but veggies are a challenge. Going to start today with a big salad for dinner.

I have started the day with a pomelo, 4 slices of bread (two whole wheat and two from a homemade loaf I made earlier in the morning), and one poached egg. I turned the cooked yolk into a spread by mixing in spicy brown mustard to eat with my bread. Later tonight, I’ll be digging into the veggies!

I have been eating lots of green (broccoli,celery,peppers), yellow (peppers), and red and orange(peppers,carrots)veggies every day for the past month….I’ve really noticed a BIG difference in the way I feel: more energy, etc. Kashi is one of my everyday staples. I mix it with lite yogurt (15 to 20 Carbs), 4 or 5 frozen strawberries, and sometimes I even add slivered almonds and walnuts…YUMMY! It is very filling and satisfying…keeps me “full” for a long time, and I no longer crave “bad” carbs!

I am not big on steamed and cooked vegetables, But over the Summer, I had some dental issues and I started to eat some vegetables frozen and raw. I am now a bigger fan of them including brocoli.They are also lower in calories and I am trying to snack on them instead of swome unhealthy snacks.

I too, grow veggies in my garden. Still waiting for the RED tomatores. Eating lots of dark greens. I grew lots of Swiss Chard this year, and eat about a handful each day (sauteed and added to omlets, rice, couscous, ... everything). The darker the green, the better.
I have a great turkey burger recipe that adds shredded zucchini, garlic, scallions, and a little mustard and worcestershire sauce. Very tasty, and a great way to get more veggies on my plate.

Everyday I make sure I eat at least 3 veggies and 3 fruits. It makes such a difference on how you feel.

This challenge is a wonderful choice for me…I have my own fruit and vegetable garden. It is a wonderful family activity. Today, we will pick corn, beans, tomatoes, cucumbers, beets, carrots, green peppers, and blueberries!!!! Nothing is better than eating fresh produce, better yet, from your own garden where YOU control what goes into your soil. I am getting hungry just thinking about the fresh veggies and fruit…Lots of rainbows today!

This is an easy challenge for me! A day without fresh fruits and veggies is like a day without sunshine. I do eat a rainbow everyday. Today’s rainbow will consist of blueberries, red grapes, watermelon, a peach, carrot sticks, zucchini, yellow squash, green peas, tomatoes, and sweet corn. It’s going to be a ‘feel good’ kind of day!
