Advocate for avocados
Oh, the blessed but elusive green orb—is it a fruit or a vegetable? (Answer: It’s botanically a fruit but often plays in cuisine like a veggie.) Full of “good” fats and nutrients, and packed with flavor, it’s a great substitute for butter, margarine, and other fats or oils. Today, challenge yourself to add some avocado to your diet in interesting ways, including:
- Blend it into oil and vinegar, or mix it with carrot juice, for richer dressing
- Spread it on bread in place of less nutritious toppings
- Use it as a dip for cut veggies
- Mash and mix it with popcorn

I use avocado on my sandwiches and leave off the mayo. Delicious!

i love advocados and what i do is make toast in the mornig and mash up a quarter of one and spread it on my toast, this is good for lunch also

Mash avocados with tomatos for a fresh salsa with any herbs .

I like fresh tomatoes, onions and avocados. Just mixed fresh with a little lemon.

I like to take fresh tomatoes, cucumbers and onions from my garden and mix with my homemade vinegrette. mmmmmmm good. I also make guacamole with everything fresh from my garden. Then I freeze it in small packages. I just love the summer and all the fresh veggies from my small back yard. I use every inch. I have half barrels where there is concrete

A healthier BLT Sandwich:
Ripe Avacado slices
Whole grain bread
Turkey bacon slices cooked
Sliced Tomato
Lettuce leaves
Low fat MayoUse the above ingreadients to make the best BLT ever!

I went crazy trying new recipes for my mangoes and avacadoes from my tree. I have combined avacado, mango,compari tomatoes, cilantro, and olive oli and lime juice!!!! What a salsa for fish or use slices of jicama as chips!!!

I made delicious fresh Guacamole dip* to go with my vegan quesadillas.
- 2 avocados, zest & juice of a large lime, 1/4 grated vidalia, 1 grated small clove garlic, 1/4 c parsley (I HATE cilantro) & 3/4 c. tomatillo salsa. Pulse all in food processor w/ s&p to taste & 1 tsp. cumin. Served w/ oven baked fresh corn tortilla chips.
Tomorrow…..avocado and almond popsicles! Yummmmm :)

I like avocado cut up in my green salad. I feed my babies avocado from the time they can start solids. They don’t seem to like it whent hey get older but I sneak it into their berry & banana smoothies.

I cut up a quarter of an avocado in my salad. It adds healthy fat and tastes delicious!

Olive oil is a must when using this fruit. Keep it simple and you will reap the health rewards of ‘Going Green’ with the Avocado! Don’t forget your favorite HotSauce! No salt needed! Easy on the SourCream! Stuff that PEPPER! Heat by way of a GasGrill (a Touch of cooked WildRice is OK) – and -“Use Your Napkin”!

Just an FYI, avocados are a wonderful food so healthy and delicious and contain Vitamin E.
Vitamin E is Lipophil which means your body can only absorb it when you mix it with
a drop or two of oil. I prefer olive oil which is a healthier oil. -
Shrimp And Avocado Rolls hres a recipe i found , sounds pretty good :)
- 1 1/4 cups sushi rice
- 1 tablespoon rice vinegar
- 1 tablespoon mirin
- 1 tablespoon honey
- 1/4 teaspoon salt
- 8 sheets nori, top 1/4 cut off and discarded
- 2 teaspoons store-bought wasabi
- 1/2 pound cooked medium shrimp (16 pieces), halved lengthwise
- 1 avocado, sliced
- 1/2 cucumber, peeled, seeded, and cut into thin strips

Directions

Cook the rice per the package directions. Meanwhile, combine the vinegar, mirin, honey, and salt in a small bowl. When the rice is cooked, stir in the vinegar mixture and let stand, covered, for 10 minutes.

Working one at a time, place a nori sheet on the work surface. Starting at the edge closest to you, spread the bottom half with a slightly rounded 1/3 cup of the rice. Spread 1/4 teaspoon of the wasabi in a straight line across the center of the rice. Top with 4 of the shrimp halves laid end to end, 1/8 of the avocado, and 1/8 of the cucumber. Using a sushi mat, fold the end of the nori nearest you over the filling and roll. Repeat with the remaining ingredients. Cut each roll into 6 pieces to serve.
