It’s in the middle of the night….. and could not sleep. I decided to read my daily challenge for the day at 2:15am. I made an old fashioned “PBJ sandwich”.... however, I modified it by making a “double decker” with realy fresh white bread and topped the upper layer with roasted almonds (did not have almond butter). It was a great midnight snack …. along with a tall glass of really, really cold milk.

One of my favorite snacks is to slice an apple and spread a thin layer of crunchy peanut butter on the slice. Very filling, satisfies my craving and very healthy.

PB is a weakness of mine. I discovered Soy Nut Butter. It is wonderful! It takes a little getting used to but so good.

I make my own peanut butter with my food processor. I toss in sliced almonds and ground flax seed

I love almond butter! I bought a giant one at costco a little while ago and am almost out. Other favorites are sunbutter and cashew, both of which are in my pantry right now.

Peanut butter should be a food group all it’s own. I look forward to trying almond butter. One of my families fav PB&”J” combo is with a fresh firm banana sliced length wise with PB on top & bottom slices of bread, then as a desert, sprinkle choc chips between the layers of PB.
