I love to have spicey red lentil chilli in the winter. We had snow yesterday and I think it would be fitting to bust some out today!!

As a vegetarian, lentils are a wonderful source of protein and energy; they are a staple in my diet! Lentil soup is great, but also gently cooked lentils added to a spinach salad with goat cheese and beets is a great lunch!

My brother in law made stuffing with mashed up lentils and ground turkey for the thanksgiving bird last year. It was DELICIOUS. Wasn’t a lentil fan til I had dressing and now am all over the place looking for great lentil recipes. Anyone have great recipes out there? . Thanks.

Muir Glen Lentil soup is great as a weeknight dinner. I add organic vegetable broth, spinach, shredded carrots and serve over Kashi Original Pilaf. I serve it with a cucumber, tomatoe, mozzeralla salad! Delish!

Anyone that wants more lentils and / or beans or different varieties should check out Indian daal recipes. Delicious and simple to make so long as you keep a well-stocked spice cabinet, and potentially extremely healthy so long as you don’t make some ridiculously high-fat, rich version. :)

In our Italian/Irish New York family, we ate Lentil Soup on New Years as a good luck soup, similar to the Hoppin John dish eaten in the South on New Years. Any one remember that tradition?

I made ham and bean soup with lentils last week. So good. I also add lentils to my split pea soup.
