Bake a naturally sweetened cake

One way to make your next cake a little less processed and more wholesome is to use natural sweeteners, like evaporated cane juice and honey, instead of white sugar. What is evaporated cane juice? It’s the first juice squeezed out of the sugar cane stalk. It is generally 50% less processed than refined sugar, and retains slightly more molasses. Its small particle size makes it perfect for baking. This weekend, challenge yourself to bake a cake and substitute evaporated cane juice crystals for granulated sugar. (It’s an easy trade – they can be used cup-for-cup.)

I have started using stevia but I also use honey, maple sryup and white sugar. I am going to hunt where I can buy eveaporated cane juice to substitute for white sugar.

I have used honey in recipes for years. My mom had a cookbook from rationing during WWI & II. The brownies were great. I use demerara sugar for lots of things now. I look forward to trying eveaporated cane juice for holiday baking! Thanks!!
