Soup up your soups
Not all potages, broths and soups are equal when it comes to antioxidants and vitamins. Antioxidants, present in foods as vitamins, minerals, carotenoids and polyphenols, are known to delay onset of many age-related diseases (when combined with a low fat diet). What should you look for in a soup? In two words, color and texture. Tomatoes, broccoli, garlic, cauliflower, cabbage fit the bill. This weekend, challenge yourself to make a batch of antioxidant-rich soup and freeze several meal-size portions.
