Opt for artichokes
Artichokes are not only delicious – they just might help to lower cholesterol and promote heart health. Plus, they’re high in nutrients and fiber and low in calories. Artichoke season spans spring, summer and early fall. This week, challenge yourself to enjoy an artichoke or two while they’re still in their prime.

After reading how nutritious they are, I am going to grow some.
We grow most of our veggies, and have lettuce and spinach all winter
in a small hot bed. -
Sure! Here are a few recipes I found for some lighter sauces for artichokes. The first is for a creamy dill artichoke dip. It still seems indulgent and rich, but it is based on nonfat yogurt instead of cream or butter. The second is for artichokes with pesto and cannellini beans. It is not quite as low in calories, but because of the addition of cheese and legumes, it is extremely high in protein and fiber (nutrition facts are posted on the website). Hope these help!
