Summer with squash

Although often thought of as a winter veggie, squash also has a summer season too. Zucchini, crookneck, straightneck – summer squashes come in a variety of shapes and sizes. Challenge yourself to take experiment with this versatile vegetable by adding it to one of your meals. Some ideas: mix it into pasta sauce, broil or bake it with olive oil, chop it raw into salad, or steam it with organic butter.

I love to sautee summer squash in a chili oil and have it with other veggies and pasta

I like to roast it with other vegetables then blend into Hummus.

i add cooked summer squash to pasta and toss with pesto…great hot or cold!

Just picked some beautiful yellow squash from the garden, gave it a quick saute in olive oil and then spray with Bragg’s Aminos. My 1 year old granddaughter gobbles it up!

I grill squash in tin foil with with some olive oil and garlic, its so soft and tasty!

I love zucchini. I am currently growing some in my garden. We routinely have zucchini with sauteed onions in olive oil…delicious

We just steamed zucchini for lunch today. Yummy. I’m glad that zucchini season is upon us. We do not personally grow squash, but a lady in our church does and shares. Thank you.

I adore squash! I think I’ll attempt to grow it next season.I think the flowers of the yellow squash are edible, that’s what I’ve heard anyway.Then again ,I do live in the South, where just about anything can be eaten;as long as it’s battered and deep fried.

if you’re growing your own, try eating the squash flowers. you can cook them in butter, or in salad. but then the fruit doesn’t grow.

I just tried sauteing chopped yellow squash with onions in canola oil, adding a couple dashes of lemon pepper, last week. My husband, who is not a real veggie fan, really loved it. Said it was great, the best he’d ever eaten. I will fix this often I loved it too! A neighbor shared since we are growing green zucs.
