Chop veggies a day ahead
When you have chopped veggies conveniently on hand, do you eat them more often? Why not find out? Cutting up produce in advance saves you prep time at dinner, it also gives you something nutritious to grab when you feel like snacking. This week, challenge yourself to schedule 1-3 ‘chop’ days. Use them to organize your meals for the next few days and cut up veggies in advance. See if this practice changes the way you eat. _(When logging progress for this challenge, only log as many days as you participated the activity within the 7-day time frame.)_

When the weekends hit, my little family is running around doing stuff. So when it’s mealtime, I find it real easy to give in to my family’s requests for takeout, rather than going home and cooking, because I know the time it will take, not to mention the work. But if I prep everything today, by chopping all the fresh stuff in my house, whipping up a dressing and quick-cooking some chicken for my husband, we can have salads, sandwiches and even Sunday night soup at the ready. Ooo! I am so pumped about this! We’ll save a bundle in cash, too! It looks like my knives and food processor are gonna get a workout today!

I usually chop up my breakfast veggies the night before, place them in a zip lock bag and in the morning I just dump them into the frying pan. If I’m chopping something up for dinner I just go ahead and chop extra for the next day.

veggies onhand is wonderful I eat more if I keep them on hand and eat less meat. (so less fat)
