Chop veggies a day ahead

When you have chopped veggies conveniently on hand, do you eat them more often? Why not find out? Cutting up produce in advance saves you prep time at dinner, it also gives you something nutritious to grab when you feel like snacking. This week, challenge yourself to schedule 1-3 ‘chop’ days. Use them to organize your meals for the next few days and cut up veggies in advance. See if this practice changes the way you eat. _(When logging progress for this challenge, only log as many days as you participated the activity within the 7-day time frame.)_

    When the weekends hit, my little family is running around doing stuff. So when it’s mealtime, I find it real easy to give in to my family’s requests for takeout, rather than going home and cooking, because I know the time it will take, not to mention the work. But if I prep everything today, by chopping all the fresh stuff in my house, whipping up a dressing and quick-cooking some chicken for my husband, we can have salads, sandwiches and even Sunday night soup at the ready. Ooo! I am so pumped about this! We’ll save a bundle in cash, too! It looks like my knives and food processor are gonna get a workout today!

    I love slicing and dicing veggies and fruit – I find it to be a meditative activity. I went to the produce market yesterday and spent a hal hour this morning chopping veggies to have on hand for the next couple of days.

    No doubt it saves time,but you loose most of the nutrition specially if you cut them in advance of days.To get most of the vegetable or fruit,we should always cut them and eat within few minutes.

    just did this the other night. was making a meatloaf to store in fridge for the next days meal, so we had all onions/peppers/etc cut night before so i just mixred them fresh in meatloaf before cooking

    I love this idea! I’m going to chop lettuce today. I may even go nuts and chop an onion. LOL

    I chop my veggies for the week so it is easy to have a healthy snack or a great tasting salad.

    I usually chop up my breakfast veggies the night before, place them in a zip lock bag and in the morning I just dump them into the frying pan. If I’m chopping something up for dinner I just go ahead and chop extra for the next day.

    I use them for snacks and my meals when I chop them ahead of time.

    An excellent idea – and a healthy reminder to do this! I always eat all my carrots, tomatos, or whatever veggie snack I bring to work. Need to do this ahead of time and I am sure I will eat a greater variety. I agree – I never have time in the morning!

    This works great! When you’re rushing around in the morning you just don’t have time to cut up veggies for a healthy lunch & snacks. When they’re already cut, you just grab a bag & go!

    veggies onhand is wonderful I eat more if I keep them on hand and eat less meat. (so less fat)
