One thing I LOVE to put on my salad when it gets boring is cornbread. Take a small piece and crumble it up. Its sweet and tastes great!

I love newman’s own light dressings. They have many delicious varieties. One of my all time favorite waldorf salads consists of one large apple cored, with skin left on and diced. Add 1/4 cup of diced celery, and two tablespoons of chopped walnuts. For the dressing mix 1 tablespoon pineapple juice with 2 tablespoons of plain yogurt. (I prefer Stoneyfield) Mix all ingredients together. You can eat it plain or I like to make a meal of it by taking 1/2 of a whole wheat pita, spread one wedge of Laughing Cow light original cheese then stuff the pita with as much of the Waldorf salad mixture and enjoy the extra on the side. Delicious and very good for you and only about 325 calories for the whole meal and guaranteed to keep you satisfied.

I have a salad made of fresh spinach, fresh fruit and a dressing made of fat free sour cream, low fat milk, a touch of brown sugar( I use sugar free brown sugar), and grated nutmeg. It is very refreshing.

I now eat my salad healthier, I use to load it with salad dressing because I didnt like the taste of the salad, so now I make a Organic Spring Mix Salad with olives, Walnuts, sunflower seeds and flax and then add pineapple, peach salsa. Talk about a great lunch and less bad stuff than deciding on a burger on the go!

Sun dried tomatoes are yummy on salads. I have recently tried a mango salsa mixed into traditional salad. It was sooo good!
