Simplify dinner
Cooking a nutritious meal after a long day at work can sometimes be overwhelming. One great way to reduce the effort - and the dishes afterward - is to cut-up your produce before leaving the house in the morning and then cook everything using one pot when you come home. Soups are an obvious choice for this kind of meal, and there are lots dishes that you can make with a slow cooker (which are more energy efficient than the stove). The nice thing, too, is that when different foods simmer together their flavors blend in delicious ways. Today, challenge yourself to find a one-pot recipe and plan a day for simplifying dinner by cooking a one-pot meal.

I do this all of the time….I’ll start out with vegetable potstickers (35 Carbs per 5 or 6) slightly browned in 3 or 4 tbl. of extra virgin olive oil…then in the same pan/skillet, I’ll add frozen broccoli, carrots, mushrooms, pea pods, etc. (or fresh if in season), cover, and slow steam-cook (low heat) for another 20 to 30 minutes, stirring carefully every 5 to 10 minutes. I usually add lite soy sauce to the mix towards the end of the cooking time for added flavor….you can always add almost any of your favorite veggies to this, and it will always taste delicious…so experiment! :) Tons of fiber and low carb

I am planning my menus for the week so I have a better range of meals. I also am trying to use 5 ingredients or less in the main courses I select. Also, I am using the toaster oven for baking whenever possible to decrease the energy used in meal preparation.

I am going to cook pulled pork for dinner tomorrow in my dutch oven. What a delicious way to simplify!
