Prepare fruits and veggies for the week

By Kashi Read more cooking, daily challenge, and healthy eating

Sometimes, people don't eat enough fruits and vegetables because they don’t want to take the time to prepare them. Today, make an effort to avoid this pitfall by cutting up your favorite fruits and veggies and dividing them into single serving-size packs for easy on-the-go snacks. You can also apply this same idea for your weekly dinner menu; by cutting up veggies today (and storing them in air-tight containers), you’ll probably be more likely to prepare healthy dinners during the week.

This has helped me out allot throughout the past year and a half. It is easier and ready to use or eat. Plus they stay fresher if you put your cut up fruits and veggies in green containers.

I’ve started sending melon in my husbands lunches, along with his, usual, apple & banana. A small container was what I used. He actually called me to thank me.
I use to try & salvage fresh fruit & vegetables, to make them last through the week, only to throw much of them away because of spoilage. Now I serve them right away, & shop again in smaller batches. My husband loves to find a whole lb. of mushrooms in our pilaf instead of just a handful.

This is so true! Preparing my fruits and veggies does work! Thanks guys! Also, if I buy them already cut up, does this mean the market has already tainted the naturalness some how?

AHollen…Yes lemon works on apple slices, so does a lime and it adds a really nice flavor to other fruits also.

I picked up a bunch of easy-to-eat fruits and veggies blueberries, cherries, and grape tomatoes and took them to work in baggies. It was a great snack at the desk, so I could munch and work at the same time, and it killed any cravings for anything unhealthy. I think it also made me eat smaller meals. Turns out that fruit was the perfect finger food. Thanks!

Yesterday I went to my local farmers market and bought a bunch of veggies – green beans, broccoli, and squash – that I roasted with garlic and a little olive oil. I put some in baggies for today and am looking forward to enjoying them with my lunch. Roasting is pretty easy, even for non-cooks like me! Take a roasting pan or cover a cookie sheet in foil, put some clean veggies on it, and brush them with a little olive oil, garlic, and salt and pepper to taste. Bake at 375 or so until they look cooked (I like mine a little bit brown). It’s good to flip them over once or twice as well so that they cook evenly. Enjoy!

I did this yesterday and since then have eaten 2 large bowls for dinner, yesterday and today. Also had 2 servings of fruit today. Eating more produce is one of my goals so this has been a good challenge for me. Thanks!
