Enjoy an oyster
According to food lore, months with an “R” in their name are the best times to eat oysters. One possible reason for this belief is that this shellfish spawns in the “R”–less summer months, causing them to become fattier, watery, soft, and generally less tasty. Oysters are tough cookies, and can tolerate big variations in temperature, salinity, and sediment. (This is why you find them everywhere from estuaries, sounds, and bays to brackish or salty lagoons.) Rumored to enhance libido, oysters are a delicious treat that can be eaten raw or barbecued. Today, challenge yourself to explore the world of oysters, making sure you check which species are “eco”–best at this time.
