Choose chicory
Chicories include Belgian endive, radicchio, curly endive, and related flowering perennials that produce salad leaves. They are delicious and versatile plants. Even if you haven’t discovered chicory’s bold flavor, you may have enjoyed it in coffee; roasted, dried chicory has been added to—or substituted for—coffee for centuries, softening the bitter edge of a dark roast. Today, challenge yourself to add chicories to your shopping list and toss them into your wintertime salads or saute them in olive oil and garlic. In the store, look for bright, crisp-leaved specimens only.
