Roast some nuts
Here’s some nutty news: A new study hints that roasting peanuts may increase their antioxidant capacities. Specifically, “dark-roasting” peanuts upped the nuts ability to retain antioxidants. Peanut skins (not shells), which many people also discard, were markedly affected. Today, challenge yourself to roast up some yummy peanuts and toss them into Asian noodles or a salad, or munch them alone — and eat those skins, too!

I love Thai food. The use of peanuts with noodles, shrimp and spices in Pad Thai cause your mouth to burst with flavor.
